The ‘Rendez-vous’ series at Le Beaulieu, our contemporary French fine-dining restaurant at Metropole Hanoi, continues its celebration of culinary artistry with an extraordinary four-hands dinner featuring Chef Olivier Bellin of the two-Michelin-starred L’Auberge des Glazicks and Le Beaulieu’s Chef de Cuisine Charles Degrendele.
On 9, 10, and 11 January, Chef Olivier – celebrated for transforming his family’s 150-year-old countryside inn into a Brittany gem, now a Relais & Châteaux property and a member of Les Grandes Tables du Monde, two of the world’s most prestigious culinary associations – will join Chef Charles to present an elevated six-course menu, with three signature dishes from each chef.
Chef Olivier’s creations will showcase the delicate elegance and bold character of Finistère, his native region, while Chef Charles brings his contemporary finesse to redefined French classics. Through technique-driven dishes and carefully selected premium ingredients, the two chefs will reimagine French cuisine with simplicity, innovation, and refined balance.
